Executive Chef & Pit Master
Derek, a Texas native and Le Cordon Bleu graduate, earned the highest level of distinction during his culinary studies. He began his career at Omni Wyndham, where he spent seven years refining his culinary and management skills before relocating to the east coast.
After resettling in Washington, D.C. in the mid 2000's, he served as Executive Chef in both a senior living community and at Hill Country BBQ—an experience that deepened his mastery of barbecue traditions while strengthening his leadership in high-volume kitchens.
Derek eventually settled on Maryland’s Eastern Shore, where he was recruited as a consultant specializing in barbecue. Since then, he has partnered with local hospitality groups in both consulting and executive management capacities. Today, as Executive Chef, he continues to merge classical training with his passion for authentic pit barbecue, delivering memorable dining experiences rooted in both technique and tradition.
Beyond the kitchen, Derek is dedicated to supporting the regional food community through partnerships with local farmers and producers. He is equally passionate about mentoring and training the next generation of chefs, helping them develop both skill and creativity.
At home, Derek enjoys cooking for family, tending his garden, and spending quality time with his wife and daughter.
